Make sure you get rid of all the sound deadening. Weights a ton!
i had a 520i before...ur best bet is to have plenty of grinder disks ready and get everything cut out ha,even the likes of the sunroof,take it all out
E39s have reasonably good lock out of the box. I you wanted to, add some wheel spacers and cut back the lockstops abit and it'll give you abit more.
An M5 steering box will help too as its quicker.
The front suspension setup on them is abit tricky to get loads of lock without ending up with a stupid amount of postive camber on the leading wheel so easiest thing to do for a start is fit some camber adjustable top-mounts or camber plates.
Good stiff coilovers are the most important thing you'll do to a 5 series to make it a good slider though as they are very soft to begin with!
A shorter diff would probably be the next in line after that like any BM
