I don't know the differance technically, but I know organics suck bum for abuse. I have one in the r32 and it's slipping when u dog it, it's not even old.
I have a exedy stage 2 in the cefiro and that is solid!
There's usually a difference in compound used on the disc (usually copper-ceramic for paddle ones) and force of the clutch plate. Another factor is whether the clutch plate is sprung (has springs to dampen it a bit) or is unsprung (solid disc with friction material). Also it's important if it's 3 paddle or 5 paddle as 3 paddle would be much more aggressive (on-off effect)
Usually the organic ones have stock feel and are good for cars with simple mods (intercooler, intake, zorst, fuel pump, chip, boost up). I drove an s14 with std turbo and mods above running around 290 bhp with organic exedy and it was a top job with stock pedal feel.
On my current car I have clutchmasters 5 paddle clutch (sprung disc) and it has stock pedal feel and is reasonably easy to drive although it has bit of judder on start if revs are too low. I have to launch it with about 2.5k rpm for smooth effect but it's quite normal for a low-torque, high revving CA18 motor with bigger turbo.
The fact is what is it like when it works......

Organic clutches are fine for road use and drifting.
Paddle/puc clutches are much harder to drive in traffic because of the bitting point being so sharp,you get an on off pedal,but then they do have a nice bite when being driven hard
Excedy make several types of clutches.. like for example in the sr20det range you get 6 different types just from excedy.
1st the blue box standard clutch, this is not an organic, but an oem clutch good for STANDARD power only, anymore and it will fall apart.
2ndly the pink box, standard clutch, this is the excedy organic range. looks like a standard clutch but made from different material known as the stage 1 clutch usually..good for about 280bhp before it starts slipping
3rdly the paddle clutch, comes in 3,4,5 and sometimes 6 puks, looks like a star, made from different material again, and known as the stage 2 clutch usually.. usually good for up till 340bhp
